Red pine mushrooms ragù

Ingredients

  • olive oil to cover saucepan base
  • 500g red pine mushrooms (or other mushrooms), sliced
  • 1 large brown onion, finely chopped
  • 5 garlic cloves, crushed
  • 5g lightly dried parsley
  • 200g tomato purée
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 100ml white wine
  • 3 tablespoons red wine vinegar
  • 2 teaspoons white sugar
  • 200ml water

Instructions

  1. Heat oil in a large, deep saucepan over medium heat.
  2. Add onion. Cook, stirring, for 4 minutes or until onion has softened.
  3. Toss in mushrooms. Cook for about 6 minutes.
  4. Add in rest ingredients, down to, and including white wine.
  5. Cook for about 20 minutes.
  6. In a separate bowl mix red wine vinegar, white sugar and water.
  7. Add in the mixture, and cook for about 10 more minutes.
  8. Served with pasta, rice, mashed potato, polenta or with any other side of your choice.
