Instructions
- Prepare the sweet potato: Peel and chop the sweet potato into small chunks. Boil or steam until completely tender when pierced with a fork. Drain well and mash it into a smooth puree in a bowl.
- Prep the remaining ingredients: If you do not have pre-made oat flour, blend rolled oats in a blender or food processor until they reach a fine flour consistency. Crumble the firm tofu finely using your hands or a fork.
- Make the dough: In a mixing bowl, thoroughly combine the mashed sweet potato, crumbled firm tofu, oat flour, nutritional yeast, and 1.5 teaspoons of olive oil. If the mixture feels a bit too dry or crumbly to shape, add a tiny splash of plant-based milk to help it bind together.
