Instructions
- Mix the Dough: In a large bowl, whisk together the gluten flour, nutritional yeast, and your dry spices. Pour in the 500ml water and 35ml soy sauce. Mix quickly with your hands until it turns into a sticky, elastic mass.
- Knead: Knead the dough inside the bowl or on a clean surface for about 4–5 minutes to develop the gluten strands.
- Shape and Rest: Divide the dough into 2 equal loaves or log shapes. Let them rest on the counter for 15 minutes.
- Simmer: Bring all the broth ingredients to a boil in a 3-4 liter pot. Once boiling, reduce the heat to a very low simmer. Drop the seitan loaves into the broth. Cover with a lid and simmer gently for 60 minutes.
- Cool: Turn off the heat. Leave the seitan to cool completely inside the broth.
Storage Tips
- Fridge: Store the cooked seitan in a sealed container, fully submerged in the leftover broth, for up to 7 days.
- Freezer: Portion out your servings, slice them into steaks or cubes, squeeze out excess liquid, and freeze them in airtight bags. They will last for months.
