Slow cooker vegan tikka masala

Ingredients

  • 800g canned beans (any or a mix of butter beans, chickpeas, red kidney beans, black beans, etc.)
  • 400g tomato purée
  • 1 cup plant based milk (coconut or almond)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon garam masala
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 2 teaspoon ground black pepper
  • 1 bay leaf

Instructions

  1. Drain and rinse beans in cold water.
  2. Place the beans in the base of the slow cooker.
  3. Pour the tomato purée and vegan milk into the slow cooker.
  4. Add in all the rest ingredients apart from the bay leaf.
  5. Mix altogether.
  6. Add bay leaf to the top.
  7. Cook on high for 4 hours and 30 minutes.
  8. Serve tikka masala with our perfectly cooked brown rice or with any other rice of your choice.
