Slow cooker vegan tikka masala

If you love Indian food, then you should try this tasty vegan tikka masala. Easy to prepare and cooked with a slow cooker, served as a healthy lunch with optional rice of your choice.

Ingredients
- 800g canned beans (any or a mix of butter beans, chickpeas, red kidney beans, black beans, etc.)
- 400g tomato purée
- 1 cup plant based milk (coconut or almond)
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon garam masala
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 2 teaspoon ground black pepper
- 1 bay leaf
Instructions
- Drain and rinse beans in cold water.
- Place the beans in the base of the slow cooker.
- Pour the tomato purée and vegan milk into the slow cooker.
- Add in all the rest ingredients apart from the bay leaf.
- Mix altogether.
- Add bay leaf to the top.
- Cook on high for 4 hours and 30 minutes.
- Serve tikka masala with our perfectly cooked brown rice or with any other rice of your choice.
