Rice & Lentil Base
- 300 gbrown rice, rinsed
- 150 gred split lentils, rinsed
- 960 mlvegetable stock (divided: 180ml for cashew cream, 780ml for cooking)
- 1 tbspolive oil
- 1 mediumonion, diced
- 4 clovesgarlic, minced
Spices & Seasoning
- 1 1/2 tspground turmeric
- 1 1/2 tspground cumin
- 3/4 tspsmoked paprika (or regular sweet paprika)
- 1 tspsea salt (plus more to taste)
- 1 pinchfreshly cracked black pepper, to taste
Vegetables
- 3 mediumzucchinis, diced (divided)
- 150 gbroccoli, cut into small florets
- 100 gbaby spinach leaves (about 3 large handfuls)
Cashew Cream & Finish
- 75 graw cashews
- 1 1/2 tbsptahini
- 3 tbspnutritional yeast
- 1 mediumlemon, juiced
Instructions
- Make the cashew cream: Place the 75g raw cashews in a small heatproof bowl and cover with boiling water. Soak for 10 minutes, then drain thoroughly. Transfer to a blender with 180ml of the vegetable stock and blend on high until completely smooth and creamy. Set aside.
- Cook the aromatics: Heat the olive oil in a large, deep pot over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent. Add the minced garlic, ground turmeric, ground cumin, and smoked paprika. Cook for 30 seconds until fragrant.
- Add the rice and lentils: Add the 300g rinsed brown rice and 150g rinsed red lentils to the pot. Stir well for 1 minute to coat the grains and lentils in the warm spiced oil.
- Add the first zucchini batch: Stir in 2 of the diced zucchinis and the remaining 780ml of vegetable stock. Season with 1 teaspoon of salt and freshly cracked black pepper. Stir well and bring to a boil.
- Simmer: Cover the pot with a tight lid and reduce the heat to low. Cook for 25 to 30 minutes, stirring every few minutes so the lentils do not stick to the base. If the pot becomes too dry before the rice is tender, splash in a little hot water.
- Add broccoli and remaining zucchini: When the rice has about 7 to 8 minutes left of cooking, stir in the 150g broccoli florets and the remaining diced zucchini. Cover and continue simmering until the rice and vegetables are tender.
- Make it creamy: Once the rice is tender, remove the lid and stir in the prepared cashew cream, tahini, and nutritional yeast. Add the spinach leaves and cook for another 2 to 3 minutes until the spinach wilts down into the warm mixture.
- Finish and serve: Turn off the heat and stir in the fresh lemon juice. Taste and adjust seasoning with additional salt, black pepper, or lemon juice as desired. Spoon into bowls and serve warm with extra tahini or toasted cashews if desired.
