Ingredients
- 1 olive oil to cover saucepan base
- 500 gramsred pine mushrooms (or other mushrooms), sliced
- 1 large brown onion, finely chopped
- 5 clovesgarlic, crushed
- 5 gramslightly dried parsley
- 200 gramstomato purée
- 1 teaspoonsalt
- 1/2 teaspoonground black pepper
- 100 milliliterswhite wine
- 3 tablespoonsred wine vinegar
- 2 teaspoonswhite sugar
- 200 milliliterswater
Instructions
- Heat oil in a large, deep saucepan over medium heat.
- Add onion. Cook, stirring, for 4 minutes or until onion has softened.
- Toss in mushrooms. Cook for about 6 minutes.
- Add in rest ingredients, down to, and including white wine.
- Cook for about 20 minutes.
- In a separate bowl mix red wine vinegar, white sugar and water.
- Add in the mixture, and cook for about 10 more minutes.
- Served with pasta, rice, mashed potato, polenta or with any other side of your choice.
